Ingredients

  • Tacos

  • 1 can tuna (drained)

  • 6 street corn tortillas (or low-carb tortillas)

  • ½ cup shredded cheese

  • 1 tbsp olive oil or spray (for crisping)

  • Juice of ½ lime

  • Seasonings: garlic powder, salt & pepper

  • Green onions, chopped (for topping)

  • Chipotle Yogurt Sauce

  • ½ cup Greek yogurt

  • 2 tbsp light mayo

  • 1 tbsp adobo sauce

  • Juice of ½ lime

  • 1 tbsp honey

  • Salt & pepper, to taste

Instructions

Heat a skillet over medium heat and lightly coat with olive oil or spray.

Place tortillas in the skillet and sprinkle with shredded cheese. Let the cheese melt slightly.

Add drained tuna to each tortilla and season with garlic powder, salt, and pepper. Drizzle with lime juice.

Fold tortillas in half and cook until golden brown and crispy on both sides.

In a small bowl, whisk together all sauce ingredients until smooth.

Drizzle chipotle yogurt sauce over tacos and top with chopped green onions.

Serve hot and enjoy a quick, protein-packed meal!
