Ingredients

  • 1 large sweet potato, chopped (about 2 cups)

  • 1 cup red onion, chopped

  • 1 cup broccoli florets

  • Âľ cup feta cheese, crumbled

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 1–2 tbsp olive oil (for roasting)

  • Fresh parsley, chopped (for garnish)

  • Chili oil, for drizzling

Instructions

Preheat oven – Set oven to 400°F (200°C). Line a sheet pan with parchment paper.

Prepare veggies – In a bowl, toss sweet potato, red onion, and broccoli with olive oil, garlic powder, onion powder, salt, and pepper.

Roast – Spread veggies evenly on sheet pan. Roast 20 minutes, tossing halfway through.

Add feta – Sprinkle crumbled feta over roasted veggies and return to oven for 5 minutes, until slightly golden.

Finish & serve – Remove from oven. Garnish with fresh parsley and drizzle with chili oil before serving.

Notes

🌶️ Spice Level – Adjust chili oil to taste, or swap for mild olive oil if preferred. 🥕 Veggie Swap – Try zucchini, bell peppers, or cauliflower in place of broccoli. 🧀 Cheese Options – Goat cheese or parmesan also work well. ✨ A simple, vibrant side dish that’s equal parts healthy and indulgent!
