Ingredients

  • 2 cups cooked shrimp (seasoned with salt, pepper & paprika)

  • 2 cups cauliflower rice

  • 1 cup fresh parsley, chopped

  • ½ cup mint, chopped

  • ½ cup cucumber, diced

  • ½ cup tomatoes, diced

  • ÂĽ cup green onion, diced

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • Salt & pepper, to taste

Instructions

In a large bowl, combine cauliflower rice, parsley, mint, cucumber, tomatoes, and green onion.

Add the cooked, seasoned shrimp.

Drizzle with olive oil and lemon juice.

Season with salt and pepper to taste.
